Reporting to the Director of Culinary/Executive Sous Chef, to oversee, manage and maintain the hygiene and operational cleanliness levels within all kitchen outlets, storage areas, waste control, employee dining rooms and back of house areas pertaining to food production/service in the Manor, Banqueting and the Carriage House outlets. He/she will be responsible for the implementation of HACCP and hygiene standards, kitchen and restaurant equipment and for all aspects of stewarding operations.
